A veggie Reuben sandwich? Yes!

Here is a recipe for a classic meat sandwich that has been remade into vegetarian fare by the folks that make Gardenburger.

RUBENESQUE

Prep Time: 15 minutes

Time to Table: 15 minutes


2 thin slices red onion

1 Gardenburger The Original patty

1 teaspoon butter, softened

2 slices dark rye bread or marble rye bread

1 tablespoon Thousand Island salad dressing

1 slice Gruyere cheese or Swiss cheese (1/2 oz.)

2 tablespoons sauerkraut, drained

Directions:

1. Medium skillet coated with cooking spray cook and stir onion slices over medium-high heat until tender. Remove from skillet. Add Gardenburger Original patty to skillet. Cook over medium heat for 6 to 8 minutes or until heated through, turning once. Remove from skillet.

2. Spread butter on one side of each bread slice. Place on bread slice, butter side down, in same skillet. Top with dressing, patty, cheese, onion and sauerkraut. Pace remaining bread slice, butter side up, on top. Cook over medium-low heat about 1 minute or until toasted and cheese melts, turning once.

Yield: 1 serving
