El Rancho Grande, 311 Plainfield St., Providence, will have a live mariachi band, Los Jalapenos, tonight from 7-9pm for Mexican Independence Day.
Chef/owner Maria Meza offers two choices, each $12.95, until Sept. 19.
Pollo a la Crema en Chipotle (Chicken in Chipotle Cream Sauce) - A traditional Oaxacan dish with chicken breasts simmer in a rich sauce of sweet Mexican crema, garlic, onion, parsley and fresh chipotle peppers. The peppers bring the heat and the crema cools them down. The dish comes with black beans and Arroz Verde con Rajas. Arroz Verde con Rajas is long grain white rice cooked with spinach, parsley leaves, onion, garlic, and slow roasted poblano peppers.
Pechugas en Salsa de Poblano Gratinadas (Chicken Breast in Poblano Sauce), a savory dish with chicken breasts cooked in freshly ground pepper, Mexican crema, butter, milk, and hand-picked chile poblano peppers, topped with Monterey Jack cheese. The mixture is then finished in the oven. The dish is accompanied by Arroz Negro. This black rice starts off white with long grain white rice cooked in tomatoes, garlic, onion, and mildly spicy serrano peppers. The key ingredient is liquid from frijoles de la olla.
Each dish includes a mango salad of fresh mangoes, red Fresno chiles, onion, cilantro, and a light zesty squeeze of lime dressing.
Today and tomorrow customers will be treated to one complimentary glass of white sangria.
