Better ideas for using the zucchini bounty

I'm tired of reading recipes for zucchini that mostly add tomatoes, a little garlic and onion, and stop there. So I was pleased to see that Jen O'Callaghan at the Nashua (N.H.) Telegraph had gone beyond the obvious in Zucchini a versatile vegetable that can be prepared in more ways than one: Summer Squash Ribbons With Basil And Lemon, Zucchini And Goat Cheese Rollups, Zucchini-Lemon Muffins and Mini Zucchini-Ricotta Galettes.

And if you have large zucchini, consider Stuffed Zucchini with Turkey Sausage from Simply Recipes, below. It's ground turkey with spices, tomato and parmesan cheese stuffed into a big old zucchini boat.
